Yeah, a lot of it is mentioned in the commentaries. And some of the stuff I've picked up from conversations on various FF boards over the years. Though I did make a mistake in my previous comment, the Han Solo in Carbonite doesn't appear until "The Message." :-)
You Must see Blazing Saddles. It's a parody of Westerns in general, and not really of any one movie in particular. And so far from politically correct there is no way it could ever be made today. As for Spaceballs, it parodies a lot of sci-fi movies, not just Star Wars. Although, if you have even a passing familiarity with Darth Vader and Yoda, you'll pretty much get all the jokes. And ya know, I was not all that impressed with The Producers (either version) or Young Frankenstein. Especially, Young Frankenstein. I'd heard so much about how great it was, but I just didn't find it all that funny. I do love History of the World, Part One though. Have you ever seen his Silent Movie?
